Cilantro Lime 'Rice'

I am pretty impressed with myself over this recipe-


so impressed in fact- that I wanted to document it here so that I can make it again!

deeee- licious!

Cilantro Lime 'Rice' (Cauliflower)

- 1 head of cauliflower
- juice from 1.5 limes
- cilantro- probably about 2 tblsp minced
- 3 garlic bulbs (not heads) minced
- 1/2 onion chopped finely
- 1 cap full of Olive Oil

Boil cauliflower until soft. Drain. Set aside

Mix all ingredients in a bowl and then add cauliflower. And stir, chop it up until it becomes 'rice' consistency.

Season with salt, pepper, and Tony Chachere's.

This was excellent. We made a big pot of beans and mixed the rice and beans. We also made fajitas and it was a great side dish. Just as good warmed up the next day-

Cooking it up!

This weekend we made some yummy food. It was such a beautiful weekend- 75 degrees- sunny with a little bit of cloud cover- nice! K and I went for a run Saturday morning- played at the park- talked to the cows-it was just nice. OH- and we also took family pictures on Sunday- but more on that in another post.

Back to the cooking-

I actually thought that it was going to rain-(I don't know why we even listen to the weather guys in TX) so I was thinking something yummy in the crock pot was called for. These crock pot carnitas from Weelicious are the best. Super easy- since you just dump it all in and go- and they fill the whole house with flavor. To top them off I found this Mexican Coleslaw - it added the perfect "crunch" to the tacos- which we put on corn tortillas. The only thing about the coleslaw is that it calls for diced avocados- and it makes a lot. So now the leftover's have turned a little brown. So next time I think I won't add the avocados to the main dish- I will just wait and add those to each individual serving.
We have actually eaten these yummy tacos for 3 days now- and plan on warming them up again tonight after BigSisterC's basketball game- they are just that good-

You should feel special- not everyone gets this treatment-

So- I always think I would like to share recipes with everyone on here- but then again- some of my recipes are "special" and secret. And if I told everyone how to make it- then they wouldn't be like "Oh would you pleeeeeease make that way yummy thing that you made last time?" and that makes me feel special-

So-

I want to make all my readers feel special- so this is what I decided to do- I will share a recipe with you all. Now, it's not one of my specialspecial ones- but I have to say it is a very good one! I got the idea online- and tweaked a little here- and added a little bit of this- and took out a little bit of that- to come up with-

Taco Roll Ups! very good- easy to make and they go fast!

OK- you will need:
-flour tortillas
-1 can of refried beans
-1 block cream cheese
-1 can rotel
-1 can drained corn
-1 pack of taco seasoning
- salsa

Soften the cream cheese and mix it with the beans. Add the taco seasoning. Drain the corn and rotel and add both in the mix. (you can also add green chilies or a little bit of salsa) Spread mixture over the tortilla and roll it up. Of course, you will do this on each tortilla until you run out of mix, or run out of tortillas.

I would suggest letting the rolled up tortillas sit in the fridge overnight. They are easier to cut after they have set for a while and are cold.

But when you are ready to serve them, cut them up in to thick slices and serve with your favorite salsa for dipping.

I hope that you will make these for a party and then the next time you see that person they will be like "Ohhhhh those little rolly up taco things that you made were sooooooo good- could you come over and make those for my party?" and then you will see how good that feels! Pumpkin Gooey Butter Cake

This stuff is so good! Pretty easy to make too. But consider yourself warned- here is the warning:

*IF YOU MAKE THIS- YOU WILL EAT IT*

And you may eat it all by yourself and not want to even share with others- so proceed with caution. And I am ok with that- if you are ok with that. But it's really not nice to not share- especially if you plan on making this around me :)

This is Paula Dean's recipe, I found on the Food Network. A great Thanksgiving or festive fall recipe! (or weekend, weekday, morning, afternoon, evening, whenever recipe too)

INGREDIENTS:

Cake:
- 1 package of yellow cake mix
- 1 egg
- 8 tablespoons of butter, melted

Filling:
- 1 (8 oz) package cream cheese, softened
- 1 can pumpkin
- 3 eggs
- 1 teaspoon vanilla
- 8 tablespoons butter, melted
- 1 (16 oz) box powdered sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg

DIRECTIONS:

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 x 9 inch baking pan.

Filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40- 50 minutes. make sure not to overbake- the center should be a little gooey.

Serve topped with whipped cream~!

Spooky Cooky Cake Pops

My 1st attempt at making Allyson's famous cake pops-I have a whole new respect for Allyson's talent! These pops are a lot of work- but for my 1st try- I think I did a pretty good job. They sure taste great! Check them out!

Addicting Dip!

Seriously this is the most addicting dip! I mean- I have never done crack- but I am pretty sure this is what it's like, and I would much rather be addicted to this dip- it's delicious! Give it a try. *warning* IT IS ADDICTING- you may not be able to stop- may want to make in small batches or be prepared to eat the whole batch at one time. If you serve this at a party- people may fight over it. And if you run out of chips- be prepared with spoons or anything else you can dip in this or you may have some people breakdown. - think crack addicts (really you could dip in dog food and it would still be good)

Here goes- this recipe is from my friend's blog Home With Mandy (great cooking blog) It's called Enchilada Dip

-2 cans of white meat chicken

-1 can of diced green chilies

-1 can Rotel (drained) I like the Rotel with green chilies in it.

-1 stick cream cheese

-shredded cheddar cheese

Mix all ingredients EXCEPT cheese in cooking dish. Then sprinkle grated cheese on top and bake in the oven at 350 until hot and bubbly. Serve with some chips! It's SO good!
