My March Bunko

I hosted Bunko this March! We had a great time- as always. 

I decided to go with an 'Italian' theme....kinda.

All the food turned out great! I didn't win any money- but you know- I guess I can't win every time right?

I made this yummy punch. (minus the alcohol)
 Set aside different types of white wine and flavored vodka to add as mixers. That way the pregnant girls had a fun drink to have too!


For The Spread


These meatball stuffed biscuits we YUM. I got the inspiration here- but didn't get too fancy. I just wrapped a meatball and part of a string cheese inside the biscuit- and baked them. Then served up some marinara sauce on the side for dipping.
Picture below- we had mini caprese salads. Super easy and the presentation was too cute!


I got these new little dessert bowls and have been just itching to make some individual desserts in them! 12 girls in bunko- 12 dessert bowls.... coincidence?? I think not.

This dessert- Italian Bakeless Cake- was VERY good and very easy. Will make again for sure.


These are my own recipe- basil cream cheese stuffed mushrooms. Always a hit- they don't look very pretty- but no worries- they don't last very long.


 For the main dish- in my new pretty casserole baking dish- I did spinach, cheese, and meat stuffed shells. Kind of my own concoction. It's good- and even a little bit good for you! I took inspiration from this recipe and this one too. Combined what I liked about each to make up my own.

30 weeks- 10 weeks to go- that's 70 days.....

OK- here we go-

How far along? 30 weeks- the countdown is on- I know it's going to go by fast- even though some days go by slow. Overall I know she's going to be here before we know it. I am SO ready to meet her!

Body Changes? Obv- I have a big belly.... haha.

Sleep: Still sleeping pretty good. I have to go on 2 work trips next month! A little nervous about that- getting through the airport and rude people with a belly in the way- AND then having to sleep in a hotel room. I got an inflatable wedge pillow that I can take in my suitcase and hopefully it will help prop me up in the hotel bed.

Best moment this week: THIS- by far. Look at those chubby cheeks. She looks like her brother and she has a little bit of hair! hehe.



Food Cravings: I am pretty sure what I have is NOT cravings but excuses. Like- well since I am pregnant- and only for about 10 more weeks- I should have another slice of pizza- and maybe just one more cookie- OH and another cupcake... right?

What I miss: Prob going to have to get help shaving the legs now. We do have a bench in our shower and that makes it much easier.

Symptoms: Dry skin (could be the weather?) My multi-tasking skills are at an all time low. And if you knew me- then you know how much I multi- task..... it's been near impossible lately.

What I am looking forward to: a easy relaxing weekend. We have been on the go go go lately with basketball games, our annual crawfish boil, and all that- so a weekend with no plans? why yes please!

Workouts: I am slowing down for sure. Push ups are hard- doctor advised me to lay off ab exercises  core work is ok- but no crunches or anything that isolates the abs. Combat is still my favorite class- trying to fit that in twice a week- along with Boot Camp twice a week- the a workout on my own once a week. Sometimes getting to the gym is the hardest part.

Milestones: I PASSED MY GLUCOSE TEST!!! First time around! yayayyaya! what a relief! soooo happy about that.

well hello 24 weeks

I got a bump in the front and a bump in the back!

How far along? 24 weeks
Body Changes? pretty sure the belly is growing. and heartburn is a mo-fo. We had a jalapeno popper pizza (I KNOW) Saturday night- so good. Really good. But baby girl did not agree. Maybe it was just too much, I mean, cream cheese.... bacon.... jalapenos... on a pizza- YUM. But lesson learned.
Sleep: Besides the whole Spring forward clock change. Sleeping is going fairly well.
Best moment this week: Had a date night and went to see OZ- and ate pizza. Also had lunch with some highschool girl friends and that was very nice!
Food Cravings: maybe we should talk food aversions here. Guess I will be staying away from the jalapeno popper pizza... booo.
What I miss: 
Symptoms: tight belly- starting to have to take workouts a little easier because it gives me a weird discomfort below my belly. Heartburn.
What I am looking forward to: this week is Spring Break! Doctor's appointment on Wednesday. Sunny longer days.
Workouts: Like I said- taking it a bit easier. But still busting through. Making it to Boot Camp, Body Flow, and Combat once a week. Then lifting weights too- averaging about 4-5 workouts a week. Bought a maternity support belt and I am still unsure how I feel about it. It's just a little bit weird  Not really uncomfortable- but not comfortable either. Although it does seem to really help- especially in Combat class.

Milestones: 24 weeks! yay! She's moving more- but I for sure felt like there was a LOT more movement the 1st time around. I am going to ask more about this at my appointment this week. Always something to worry about as a mother, right?

Growing- but still in the 10% for weight and height- at your appointment you were:
Weight- 28 lbs 2 oz
Height- 36 inches

Right now you are loving robots, transformers, and still love to race your cars. We watched Real Steel with Hugh Jackman and you love it. You will line up the couch cushions around the room and 'box' them. And of course finish it all off with the robot dance.

You also like to 'transform' You make sound effects and go from a standing position and transform into a car (laying on the ground position) Then make the sounds to transform back up to a Transformer!


Your JJ (who spoils you- along with all your grandparents) has recently given you a new transformer- Bumble Bee. It goes just about everywhere with us. She also gave you a Spiderman jacket. (the hood comes up and goes over your eyes- giving your Spidey- eyes) We wear it aLOT. When you wear it to school all the kids think it's so cool and they will shout out for SPIDERMAN! You can even throw your web.


You can count and now are recognizing numbers- like the numbers on the race cars. You know several songs, but on repeat for you these days is
- Justin Beiber- Body Rock
- Pink- So What
- Skrillex- Rock-n-Roll

All of these you have learned from the Wii Dance 4 and you even know- memorized-  the dance moves! You really get into it. (I think you get the dance moves from your mom- the good ones anyhow)


Last night on the way home I told you that the Bachelor Finale was coming on tonight and you said
"oh my goodness! that's so cute"

You also like to say 'awesome'  'oh my word' 'I didn't do that'  'that's my favorite ____'

Your Dad finished your big boy bed last weekend and we have you room almost ready to go. We will be making that transition very soon. Probably going to actually take your crib apart and pack it away until we are ready to use it for your sister. I think I am more nervous about the move than you are. Upstairs just seems like so far away.

You are a very picky eater. Chicken nuggets, hamburgers, pizza, mac-n-cheese, cheese, bananas, yogurt, apple sauce, spaghetti, turkey dogs, sausage, bagels with jelly, and any type of crackers- are you staples. You may not know it- but you have eaten fish sticks, calamari, and shrimp- we told you it was chicken :) But you liked them all. We also sneak in veggies in just about everything we can.

If I ask you what you like- you will tell me things like mushrooms, tomatoes, and salad- even though you haven't ever tried any of those (willingly)

You know how to work the Ipad like a pro. You can find your games (in a folder) your TV shows and movies and  YouTube is your favorite. You love to play outside. Riding your bike or playing in the dirt. Also playing with Daddy's tools. I imagine this summer you will become a fish in the pool.



I asked you what you thought we should name your sister- at 1st you said Firetruck. Pretty sure she would not be too happy about that. Later you told me Reagan or Forest- two of your friends at school.
your 1st time at the dentist- you were a CHAMP! everyone commented on how good you were.

We have pretty much mastered pee- pee in the potty. You can go by yourself and rarely have any accidents. Poo-Poo is a whole other story. You tell me that transformers go poo-poo in the potty- but not Kash. Hopefully one of these days you will make up your mind to go. You have gone maybe 3-4 times- but for some reason you don't like it and it seems to scare you. So we will be patient- I know when you make up your mind to do something- you can do it. That time will come.

Every morning you wake up with a big smile and a snugly hug. It's the best way to start anyone's day. You are happy and brighten days often. You can have a hard head (not sure where you get that from) but at that same time it's nice to see you work situations out with your hard head. You grow more and more everyday- we are learning new things from you as often as you are learning from us. You are loved by more people than you can imagine.

Cilantro Lime 'Rice'

I am pretty impressed with myself over this recipe-


so impressed in fact- that I wanted to document it here so that I can make it again!

deeee- licious!

Cilantro Lime 'Rice' (Cauliflower)

- 1 head of cauliflower
- juice from 1.5 limes
- cilantro- probably about 2 tblsp minced
- 3 garlic bulbs (not heads) minced
- 1/2 onion chopped finely
- 1 cap full of Olive Oil

Boil cauliflower until soft. Drain. Set aside

Mix all ingredients in a bowl and then add cauliflower. And stir, chop it up until it becomes 'rice' consistency.

Season with salt, pepper, and Tony Chachere's.

This was excellent. We made a big pot of beans and mixed the rice and beans. We also made fajitas and it was a great side dish. Just as good warmed up the next day-



Go Cart Races

We went to Lockhart with Granny to watch the Go Cart Grand Prix!

It was actually really fun. Those little things can go SO fast. We watched them zip around corners and crash into hay bales-

Of course we visited the pit area too. And the fire trucks.


















And for days after K went around making zipping sounds all through the house and telling everyone he knew about those fast race cars.

We will plan to go next year again for sure!
